OK, I’ve finally decided how to fix the prime rib roast I got the other day and I can’t wait to try it out. Once again, the legions of Twitter followers that I have
came to the rescue, specifically @cmcadams. He suggested a salt encrusted prime rib recipe. I was considering that option but his suggestion put me over the top and I decided to go that route.
To fix this you basically:
- Take a lot of kosher salt.
- Wet it down until it becomes a paste, just barely wet enough to hold together, and then-
- Cover the entire roast with the salt.
- Place the roast in a baking pan/sheet and cook.
- Remove the salt crust from the meat before serving.
My plan is to take the 3 pound roast and cook it on the Big Green Egg at about 225 degrees until the internal temp reaches 120 to 130, then take it off and let it rest before serving. I will use a few cherry wood chips to give a light smoke flavor. I plan on fixing some mushrooms sauteed in red wine, asparagus, and some rice to serve with the roast.
That’s pretty much it. I will try to remember to take some pictures, or perhaps a video of the process and post that a few days after.
